Based in Boursault, Aurélien Lemaire took over the family estate in 2019, introducing organic viticulture and a blend of tradition and innovation. His vines, rooted in clay-limestone soils, thrive under a minimalist approach: agroforestry, native yeasts, and aging in barrels or amphorae. His undosed cuvées reveal the purity of the vintage and the unique character of the terroir. Among his standout champagnes, « Les Terres Jaunes » (100% Chardonnay) and « La Trempette » (Blanc de Blancs aged in amphora) are celebrated for their minerality and freshness. He also crafts bold blends like « La Guinguette » and Coteaux Champenois, reflecting a relentless pursuit of authenticity and terroir expression.
