Nestled in the heart of the Marne Valley, on UNESCO-listed slopes, Adrien Salot carries forward a bold winemaking tradition inherited from a lineage of vignerons who, since the 1990s, chose to break free from industrial conventions. Across just two hectares of old vines, the estate cultivates an exceptional terroir defined by marine limestone, light clay, and fossil-rich sands—each parcel tended with rare dedication: no chemical inputs, preserved biodiversity, and absolute respect for natural balance. Adrien Salot, a vigneron, artist, and oenologist, imparts a unique identity to his champagnes, blending ancestral know-how with creative sensitivity. His labels, adorned with his own Roman-inspired drawings, symbolize the fusion of history, terroir, and personal expression. In the cellar, his approach is equally distinctive: the wines, always vintage-dated, are aged in large oak barrels using native yeasts and minimal sulfur additions, ensuring the purest expression of fruit and soil. The result? Characterful, zero-dosage champagnes where the minerality of the Marne’s slopes and the complexity of old vines shine without artifice. Each bottle, produced in limited quantities, tells the story of a place, a year, and a philosophy: that of a living, free, and deeply terroir-driven wine.
